Dieser St. Laurent wurde traditionell in offenen Bütten während 16 Tagen vergoren, anschliessend wurde derWein ca. 7 Monate lang in 2-3 jährigen Barriques und in 10 Proz. neuen Barriques gereift. Er ist geprägt von fruchtig-würzigen Noten, die an Waldbeeren, Amarenakirschen, Kakao und Kaffeebohnen erinnern. Am Gaumen braucht er etwas Zeit sich zu entfalten und bietet dann einen komplexen, würzig-fruchtigen Geschmack mitguter Intensität. Das Tannin ist fein und präsentiert sich samtig. Passt zu: Pastagerichten, würzigen Fleischgerichten z.B. Lammkeule, pikantem Gemüse und reifem Käse.
