Die Spitzen-Cuvee The Signature wird seit dem Jahrgang 1962 gekeltert und ist jedes Jahr einer anderen Wein-Persönlichkeit von Yalumba gewidmet. Dieser Rotwein war stilbildend für eine Reihe nachfolgender Premium-Weine. Der Wein reifte 20 Monate zu 70 Proz. in neuen und zu 30 Proz. in zweijährigen Barriques. Er überzeugt durch seinen intensiven Duft nach dunklen Beeren, Zedernholzaromen und schwarzem Pfeffer. Ein kräftiger, komplexer Roter aus dem Barossa Valley, der die nächsten vier bis fünf Jahre viel Weinvergnügen bereiten wird. Der Jahrgang 2000 erhielt von Robert M. Parker 90 Punkte. Passt zu: Fleischgerichten, Lammcarree aus dem Ofen mit Rosmarin-Honig-Jus, gebratenem oder geschmortem Wild oder Rindfleisch, gerne mit Trüffel.
