Ein Teil der Trauben wird ab Mitte August geerntet, der Rest erst 3 – 4 Wochen später im September. Wenn auch dieser zweite Gärvorgang abgeschlossen ist, erfolgt ein erneuter Durchgang mit dem im August geernteten Primitivo (das so genannte ‚repassare’), wodurch der Wein einen leicht höheren Alkoholgehalt und mehr Charakter erhält.
