Der andere Teil der Primitivo-Reben reift weitere 3-4 Wochen an der Pflanze, daraufhin erfolgt die Ernte und die Vinifizierung nach dem üblichen traditionellen Verfahren. Sobald die Gärung auf den vergorenen Beerenschalen des an der Rebe gereiften Primitivo abgeschlossen ist, erfolgt das repassare oder erneuter Duchgang mit dem im August geernteten Primitivo.
