Am Gaumen ist der Wein vielschichtig mit Aromen von reifen roten Früchten, Lebkuchengewürzen, Lakritz und dem typischen Hauch Garrigue, weit mit seidigem Tannin, weicher Fülle und Finesse, im Finale kraftvoll, lebendig mit guter Länge und feinem Nachhall von Röstaromen und pfeffriger Würze. Passt zu hellem Fleisch, z.B. einer saftig gebratenen Poularde mit Tomaten, Oliven und Lavendel, passend auch zu regionalen Käsesorten wie Pelardon, Tomme de Lozere und Tomme des Pyrenees.
