Am Gaumen bezaubert er zugleich sanft und kraftvoll, sehr saftig, vollmundig mit aromatischer Frucht Schattenmorellen, Himbeeren, Erdbeeren, Maulbeeren und feiner Kräuterwürze, mollig, strukturiert und lang mit samtweich gereiftem Tannin. Passt zu gebratenem oder geschmortem Rind- und Lammfleisch mit mediterranen Kräutern, Hackbraten, gefüllten Auberginen, pikanten Pastagerichten mit Tomatensauce Lasagne, Cannelloni et al. , Ratatouille, Bohemienne oder auch zu leicht gereiften Käsesorten.

Im Glas funkelt der Wein granatrot. In der Nase vereint sich der Duft von süssen, reifen, dunklen Früchtenmit sehr eleganten Aromen der Holzfasslagerung wie Tabak, Pfeffer und Vanille. Am Gaumen ist der Izarbe wunderbar frisch, elegant und harmonisch. Hallt sehr lange nach. Passt zu Fleisch und Wild.
