Le son de ble contient des fibres cellulosiques qui permettent d accroitre ses apports journaliers en fibres et d ameliorer le transit intestinal dans le cadre d un regime equilibre. Description et origine : Le grain de ble est compose entre autre d une ecorce faite d une superposition de couches ligneuses. C est cette ecorce qui fournit le son. Le ble est une plante annuelle appartenant a la famille des Graminacees et plus exactement au groupe des monocotyledones. En France, la production de ble est tres importante et il existe de nombreuses varietes cultivees. On distingue deux grandes varietes : les bles tendres et les bles durs. Les bles tendres sont ceux qui se pretent particulierement a la mouture, il est le plus cultive et le plus consomme en France. Le son est l une des parties la plus riche du ble. Il est source de multiples nutriments : phosphore, manganese, magnesium, zinc, selenium, cuivre.
