Am Gaumen wird dieser sehr konzentriert kräftige Wein mit Noten von Schwarzkirsche, roter Pflaume, Milchschokolade, Talk, Butterscotch, Sternanis und feinen Tanninen unterstützt. Die Cuvee Zephyr wurde traditionell in offenen Bütten vergoren, anschliessend wurde der Wein in französischen Eichenfässern gereift. Im Duft finden sich Aromen von reifen Beeren und etwas Schokolade und eine dezente Würze. Am Gaumen präsentiert sich der Wein mit mittlerem Körper, reifer Beerenfrucht undangenehmer Tanninstruktur. Der Nachhall ist geprägt von würzigen Komponenten und dezenten Röstaromen.
