Walk the echoing halls in the Abbey of St. Francis, where clever monks found a way of purifying the deadly water that coursed through their land. Using the natural ingredients which grow in abundance near the abbey, they purified water from the local well by crafting it into ale. From the moment you step into the Cole House, five generations of Smithwicks illuminate their story of unwavering endurance and unbeatable ingenuity through photos, portraits, letters and lively conversation. Cosy up by the fireplace and learn how one family turned a humble Kilkenny ale into a brew famous the world over! In the Brewhouse you will learn about perfecting the art of mixing four simple ingredients to produce a ruby red ale enjoyed all over the world. But that doesn't mean we are resting on our laurels. We are constantly innovating, and in the Brewhouse you'll discover just what gives our ruby ale its unique character and flavour. After an exciting trip back in time it is time for a rest pint! The perfect place to judge a pint of Smithwick's? A tasting room, of course. Description: Coming to a city as (wonderfully) chaotic as Rome can be daunting. You will get a warm, Italian welcome and get you set up for the rest of your visit. The tour starts in Piazza Navona, less of a plaza than a grand outdoor art gallery. You’ll learn about the political intrigues surrounding Bernini’s Fountain of Four Rivers as well as some of the artistic in-jokes that he carved into the stone. Next, you will head into a favorite site in Rome; the 1,900 year old Pantheon. In the early evening this marvel from Antiquity is much less crowded than during the day and your guide will take full advantage of the serenity to tell you about the history of the iconic dome. After your visit of the Pantheon the tour will stop off for a scoop of gelato – Italy’s legendary answer to ice cream — included in the price of the tour. Then take a stroll to the iconic Trevi Fountain. Your friendly, expert guide will explain the history and lore of the fountain before instructing you on how many coins to toss in depending on what wish you are hoping to fulfill (throw enough in and you might meet your soul mate!). You will finish our evening stroll at the famous Spanish Steps. Audrey Hepburn and Gregory Peck fans will recognize this spot from ‘A Roman Holiday’ - here they bumped into each other

Complete your journey with a birds-eye view of the largely untouched region as you fly back over the Southern Alps and are welcomed to the incredibly blue Lake Wakatipu upon landing in Queenstown.
