L agar-agar est un gelifiant alimentaire vegetal naturel, extrait d algues marines sauvages rouges (Gelidium sesquipedale). L agar-agar est un mucilage incolore, inodore qui permet de texturer des mets sales ou sucres (aspic, terrine, dessert, creme, gelee.). Il remplace avantageusement la gelatine car il est 100% vegetal. Il permet egalement la realisation d eaux gelifiees et la gelification de tout type de liquide.
