Wolfgang Hehle: Die Spätburgunder-Cuvee Cossmann-Hehle entstand 1996. Es fehlte noch ein unkomplizierter,leckerer Spätburgunder, der einfach zu allem passt. Nach der Gärung und dem biologischen Säureabbau werden die Weine in grossen alten Eichenholzfässern ausgebaut. Barriques werden für diesen Wein bewusst überhaupt nicht oder nur sehr sparsam eingesetzt, denn sie ist das leckere Alltags-Tröpfchen, das jeder mag. Der Cossmann-Hehle Spätburgunder ist ein ausgezeichneter Tischwein. Bezeichnend für diesen Spätburgunder sind die dunklen Fruchtnoten und eine pfeffrige Würze. Passt zu: Pasta wie zum Schnitzel oder Schinkenbrot.

Sein Reiz liegt in seiner Mineralität und stilistischer Strenge. Sein ausgewogenes Spiel von Säure und Frische macht ihn zum Urtyp eines Vulkanweins.
